Anthocyanin Content in Mulberry according to Cultivars and Growing Region

Abstract

|
The purpose of this study was to validate an analytical method for assessing the anthocyanin content in mulberry. The ultra-performance liquid chromatography (UPLC) method was validated in accordance with the International Conference on Harmonization guidelines for analytical procedures with respect to specificity, precision, accuracy, and linearity. The correlation coefficient values of cyanidin-3-glucoside (C3G) and cyanidin-3-rutinoside (C3R) were 1,000 and 0.999 respectively, and 0.20 and 0.60 ¥ìg/mL respectively for C3R. The analysis of the anthocyanin content of mulberry cultivars showed that, Simkang had the highest levels of C3G and C3R, followed by the upper Gwasang2. Analysis was carried out using the Gwasang2 variety because of its large fruit size and high Brix content. An analysis of the two regional (Buan, Gochang) varieties of Gwasang2 showed that, the anthocyanin content was different for each cultivation area. However, there was no significant difference in the overall content.
